Carolans Bread & Butter Pudding
Ingredients:
- 6 slices of pan bread buttered with crusts removed. (Panettone, Brioche or Croissants can also be used for a more luxurious pudding with a little less sugar)
- 2 oz. sugar
- 2 oz. raisons or sultanas
- 6 tablespoons of Carolans
- 2 eggs
- 1 pint of milk

Cooking time of 45 minutes
Instructions
Cut buttered bread (minus the crusts) into triangles or fingers and place half at the bottom of a deep pie dish. Drizzle 3 tablespoons of Carolans over the bread and also half the sugar. Scatter raisons or sultanas over it. Add rest of bread on top slightly overlapping each other and scatter rest of sugar over the bread. Drizzle another 2/3 tablespoons of Carolans over the top layer of bread.
Beat the 2 eggs into the pint of milk and pour over the top of the pudding soaking all the bread. Leave for an hour for it to absorb into the bread.
Bake in the oven for 45 minutes at 350oF/180oC or gas mark 6.
Best eaten warm.
