Carolans is produced in Clonmel in County Tipperary, Ireland's 'Golden Vale', and is probably the best natural dairyland in the world. The perfect setting for producing the delicious, rich cream that goes into Carolans. The place name is derived from the Irish words 'Cluain Meala', which means 'Vale of Honey'. This is very appropriate as Carolans includes honey in the recipe.

An unopened bottle of Carolans will last about 2 years on average, but this can vary depending on storage conditions - exposure to excessively hot storage conditions can adversely affect the shelf life. Whilst Carolans has a technological advantage, which gives it a superior shelf life, all cream liqueurs are best drunk 'Young' and should be consumed within 6 months of opening the bottle, refrigerate after opening.

Carolans tastes great! We are very proud of our product and believe it to be superior to that of our competitors. Consumer research in a number of markets has also confirmed this taste position - including quantitative taste tests in the USA in 1997, 2000 and in 2002, all of which put Carolans ahead of our main competitor.
In the production process, the cream and spirits mixture is 'Homogenised'. Essentially, this breaks up the cream into tiny particles and disperses it evenly in the product. This prevents the cream from separating.
